From the Indonesian island of
Bali, this coffee is
sophisticated and well prepared.
The beans are washed
(wet-processed) like neighboring
coffees from Java and Papua New
Guinea. This medium roasted cup
has traces of the earthy
Indonesian island character, but
only in the background. It is a
classic, clean cup with great
body and mildness. Eight degrees
south of the equator, among the
chain of small islands that make
up Indonesia, lays the beautiful
island of Bali. Bali is the
world's third largest coffee
exporter, and for good reason.
Rising above the steamy jungles,
are villages settled in along
the high altitude volcanic peaks
that offer ideal cooler
conditions for growing coffee
trees. On these smaller
plantations, ripe, red berries
are often harvested by hand and
then pulped the very same day.
After fermenting for 60-72
hours, the coffee beans are
washed in a water channel and
then dried with the help of
nature. The beans are spread out
evenly on large concrete drying
pans and are then given time for
the sun to works its magic on
them. To make sure the quality
of the drying process is
undeviating; the beans are raked
regularly and consistently at a
very specific pace to ensure
that each bean has reached its
potential. The Balinese
philosophy believes that the
cause of happiness is a good a
relationship with both people
and environment. This belief
system is evident in the
painstaking work of hand sorting
the beans numerous times to
remove discolored, broken,
unripe, damaged or poor quality
beans. Tourists that visit
plantations in this region are
likely to find most of the
labor, including harvesting the
trees is done by hand.Just as

shoots and seeds to start what
is now Brazils billion dollar
coffee empire. It's hard to
believe with Brazil being the
world's leader in coffee
production, that 71% of the
farms are less than 10 acres
each. Each farm is unique, and
has its own little specialty,
but the standard throughout

Legend has it that a goat
herder named Kaldi in
Abyssinia, now known as
Ethiopia, discovered coffee.
Kaldi had become acutely
aware his goats danced
excitedly after eating the
bright red berries off the
coffee bush. Soon after,
Kaldi tasted them as well
and was surprised to find he
was enjoying the stimulating
effect they had on him. One
day a tired monk walked
passed Kaldi on his way to
prayers and noticed the
excitement the boy and his
goats expressed. He too
tried the beans, and then
went to share them with the
other monks in the monastery
who were impressed that they
could now stay alert and
awake all night for prayers.
The monks, thinking the
beans might be evil, threw
the beans in the fire but
quickly took notice of the
amazing aroma they released.
The beans were then boiled
to release any supposed
residual evil and again, the
monks observed the heavenly
scent that was released from
the beans. Convinced that
the beans were not evil,
they drank the water in
which the beans had been
boiled in and were the first
to savor the taste in which
we now know as coffee, the
warm, delicious, and
stimulating beverage.It's a
fun and interesting legend,
which may not be far from
the truth. Botanical
evidence does pin point that
coffee did originate in
central Ethiopia. Five
centuries later, the
stubborn, self-reliant plant
still grows wild there, in
the shade, underneath the
protective ceiling of the
rainforest trees. Throughout
the many years, not much has
changed. Just as the coffee
tree has been able to remain
true to itself because it is
ability to self-pollinate,
the coffee is still produced
in the most uncomplicated
and straight forward way it
was hundreds of years
ago.Harvesting coffee is
mostly done by family labor,
as 35% of the coffee grown
in this region is "garden
coffee" meaning it is grown
in the vicinity of farmers'
residences. That number is
growing with the spread of
knowledge into the southwest
region.Ethiopian Longberry
is stimulating to the
senses, and is agreeably one
of the finest gourmet
coffees in all of Africa.
You can expect a light to
medium body and brilliant
acidity. This Longberry is
bursting with complex
floral, berry, and citrus
notes. Bunna, as coffee is
called in Amharic, a native
Ethiopian language, is
naturally suitable in
Ethiopia. Copious rainfall,
suitable altitude, favorable
temperatures, and fertile
soil make one realize that
coffee is natures offering
to Ethiopia and in turn,
Ethiopia's offering to the
world.The country of
Ethiopia is economically one
of the poorest countries in
the world, but it
demonstrates the world's
absolute richest coffee
cultures. While most of the
coffee is grown on .5
hectare with the family
doing most of the work,
neighbors gather several
times per day to
ceremoniously roast, grind,
and brew coffee while
sharing local gossip. This
ceremony may take place
anywhere in the region that
you may be, but never as
authentic as it is on the
plantation. The result is
always the same, a marvelous
cup of coffee and a reminder
for us to give value to each
other and enrich our lives
through
conversation.Although there
is always work to be done,
guests are never to leave
short of three cups of
coffee. Important enough to
be named they are…Abol the

other areas of the world may
just be catching up to what
the Ethiopians have known
for some time. A
thirteen-year Japanese study
discovered that 1 or more
cups of coffee per day may

not drink coffee. In a
24-year study, it was found
that women who drank 2-3
cups per month were 19% less
likely to have a stroke than
those who had less than 1

less likely to have dementia

It all began here, in what is
now called Ethiopia. Dating back
1300 years, at elevations of
over 4,000 feet above the
rolling sea, "Kaffa" trees were
discovered growing among the
roaming animals. Grown in the
deep-soiled and rolling hills of
south-western Ethiopia, today
Yirgacheffe is now known as
Ethiopia's Crown and glory,
cream of the crop, and its most
prized coffee, with its distinct
and unique flavor, it is the
connoisseur's choice of African
coffee. Ethiopians have been
cultivating and drinking coffee
longer than anywhere else on the
planet. With more than 50% of
it's coffee consumed within the
country, coffee accounts for 60%
of their national export
earnings. Ethiopian Yirgachaffe
aromatic coffee has easily has
become one of the worlds most
sought after specialty coffees.
With a soft, fragrant, flowery
note and a lingering intensified
finish; it boasts a sweet, rich,
smooth bodied flavor.
Taking special interest in what
will soon emerge as Ethiopia
Yirgacheffe coffee, the beans
are visually selected and then
hand picked. Recognizing that
single branches deliver
blossoms, green fruit and ripe
cherries simultaneously, it is
imperative to pick only the
ripe, quality cherries for the
premium quality coffee. This
means that the family that works
the terraced hectares, will have
to make approximately three
passes within the year, through
the same plot to make sure all
of the beans have been picked at
their peak. Pickers can pick an
average of 200lbs of ripe
cherries in one day. After
processing, that same 200lbs
will yield about 50lbs of green
bean. For three decades,
Ethiopian Yirgacheffe beans have
been processed via the
wet-method. After the beans are
free from the outer layers of
skin and pulp, by use of natural
enzymes, they are placed into
tanks to ferment for 72 hours.
When the sugars in the coffee
fruit begin to ferment it can
drastically change the taste of
the coffee, so this process is
very specifically timed. 72
hours of fermentation time will
allow the beans to have a higher
acidity, a cleaner floral
flavor, taste less earthy and a
more full-body than if they were
processed by the dry-method.

This estate sits on Lake Atitlan
in the most picturesque area of
Guatemala. It is surrounded by
mountains and three volcanoes.

complex acidity, medium to heavy

Coffee. There are 300 farmers in
the Atitlan area that have been
certified as organic. Guatemalan
coffee is mainly harvested in
the volcanic region where there
is ample precipitation. There
isn't a month when Atitlan has
less than 50 mm of rain. Most of
the coffee producers in this
region use water from the lake
for wet processing. Because the
coffee is certified organic, no
chemicals or pesticides are
used. Furthermore, organic
matter is frequently used as a
fertilizer. The high altitude
that this coffee is grown aids
in the prevention of pests and
disease. Drying of the coffee
beans takes place almost
entirely the way nature

The Honduran Finca Santa Maria
is grown on a family owned farm
on the outskirts of the famous
Honduran National Forest
Preserve Pico Pijol near the
province of Yoro. This coffee is

Some of the best foods in life
were created by accident.
Think…Potato chips, Corn Flakes,
popsicles and even chocolate
chip cookies, were all created
without a plan in mind. The same
holds true for India Monsooned
Voyage coffee, a unique coffee
created completely by
accident.In the 1600's sacks of
coffee beans traveled, sometimes
up to six months, from India to
Europe via slow sailing ships.
The beans were packed away in
the cargo holds of the bottom of
the ship and they would sit in a
wet, damp climate with no access
to fresh air or sunlight. By the
time these beans arrived in
Europe, they were swollen and
yellowed and the Europeans, not
knowing any different, brewed
them and enjoyed them. They came
to love their coffee as a brew
with a sweetly fermented fruit
that had an intriguing musty
tone, but one that is not at all
sharply bitter. Today, there is
still a high demand for India
Monsooned coffee. Since the
beans are no longer subject to
these dark, long voyages across
the sea, the situation has to be
recreated. To give the beans
exposure to the weather, the
Indians use a process called
Monsooning. This specific
16-week process takes longer
than any other wet processed
coffee. The beans are picked and
washed, during the months of
June to August, which is Monsoon
season. The beans are then
spread out in trays on an open
warehouse floor, and raked
regularly to give even exposure
to the weather. Although they
are not directly rained on, they
absorb the moisture from the air
and swell to bring you same
flavor that was created by
accident over 400 years ago.
After several weeks of exposure,
the beans are then left to dry
for up to two months. This
coffee is a top grade in the
line of Monsooned Arabicas, and
it is certainly pleasing to
those looking for an unorthodox
coffee with its mildly
fermented, mildly fruity taste.

suave body taste is still so
popular today is no accident.
India's coffee farmers have gone
through painstaking measures to

late 1800's with the intent on
finding coal, but they instead

Budan is the man to thank for
